Chorizo two ways – Why I ate the mushroom

Hey everyone! Boy has it been a busy couple weeks – To start with the whole family came down with the sickies one by one. Right before the family end of summer barbecue… Started off with the Little Man and ended with the Hubster and it hit him extra hard poor guy. He was still fighting off the last bit when we headed up to help my parents frame their addition.

Obviously the other big thing on the list was helping my parents with the framing. Hubby and I helped out my dad and grandpa and Little Man got to help feed the chickens, chase the goats (which he found highly amusing naturally) and play in the dirt.

He also got a bath.

But coming back home from the weekend we found ourselves without anything for breakfast the next morning, so I scurried off to the store first thing before Little Man woke up. And wouldn’t you know it chorizo was on sale!

Now I have never had chorizo before, but thanks to my preggo days of binge watching Food Network I’ve heard a lot about it. And obviously since its on sale its a sign I should buy it, right? Though, as I’m slipping it into my basket and mentally making plans on what I’m going to make from it, I realise I ask the Hubster to try a lot of new thing or re-try a lot of foods he decided he didn’t like a child. A lot of them he has changed his mind about so its been working out and he has told me he doesn’t mind. Between the two of us I am the less picky, more adventurous eater, so the few things I don’t like we just don’t eat, and that isn’t quite fair. The biggest item on my no-no list, however, just happens to be one of his favourite foods.

Of course, as it would just so happen, cremini mushrooms were also on sale. I am now standing in front of a mushroom display feeling a wee bit guilty, and decided the least I can do is give them another shot. I’ll just dice them really, really, really small and smother them in other flavours. Summoning all my courage I grab three little fungi and head home to begin the prep work. The hubster was pleasantly surprised when he got his plate, Little Man ate so fast I doubt he even noticed there was anything new in the scramble (chorizo or mushrooms) and I? Well they’re still not my favourite things, but diced up small enough I can tolerate them in a few meals here and there.

Chorizo and cremini mushroom egg scramble

  • 1/2 pound chorizo sausage
  • 3 cremini mushrooms
  • 6 – 8 eggs (depending on how large they are)
  • shredded cheese
  • salt and pepper to taste

Start by browning you chorizo. While its browning prep the rest of the ingredients. Place the browned chorizo to the side in a bowl and sauté the mushrooms in the oil that still remains in the pan.  Once the mushrooms are soft add eggs and scramble until just about finished then add the sausage back in. Sprinkle in cheese to desiring and serve.


After breakfast I even had enough chorizo to add to our Taco Tuesdays. I give you chorizo option number two…

Chorizo and Turkey Green Monster Tacos

  • 1 pound ground turkey
  • 1/2 pound chorizo
  • 1/8- 1/4 tsp. salt
  • 1/4 tsp cumin
  • dash of pepper
  • sour cream
  • lettuce
  • avocado
  • salsa verde
  • white cheddar cheese
  • 10′ flour tortillas

Brown turkey and chorizo together. Season with salt, pepper, and cumin. Start with the smaller amount of salt as chorizo doesn’t need a lot and add to what is your preference. Add it to tortilla and top with lettuce, avocado, salsa, cheese, and sour cream.


All in all I really liked the chorizo flavour, spicy but not overly so. More of a light heat then spicy and I like how it added some fat into the ground turkey tacos. Have you ever tried chorizo? If so please share your favorite recipes
